This Chicken Enchilada Burrito { has been the most popular recipe in modest Recipes for over 25 years. Million of people make every time. Why? I am so excited to be partnering with Sabra Hummus today and to share one of Kevin's new favorite quick and easy dinners. :) He requests this one just about every week! I think rice and chicken enchiladas are his two favorite foods ever. Today I am going to share with you a delicious recipe for homemade enchilada chicken burritos.

Chicken Enchilada  Burrito With just a few ingredients and little prep, you can have an easy meal that is tasty enough to entertain with. Shredded rotisserie chicken mixed with some sour cream, Monterey Jack cheese, and a can of diced green chiles rolled up into flour tortillas. The wet burrito sauce is a variation of the one I do for my Turkey Black Bean Enchilada Bake (and for all my enchiladas) but this time I went green. You can cook Chicken Enchilada Burrito using 6 ingredients and 4 steps. Here is how you achieve that.

Ingredients of Chicken Enchilada Burrito

  1. You need 3 of cooked chicken breast, chopped.
  2. You need 2 tbsp of low fat sour cream.
  3. You need 2 can of green enchilada sauce.
  4. Prepare 1 can of green chillis.
  5. Prepare 1 of tortillia shells.
  6. It's 1/2 cup of shredded Mexican cheese.

Stir in flour until a smooth; gradually stir in water. Add the tomato sauce, chili powder, bouillon, cumin and salt. Roll up into burritos, and place seam side down in baking dish. Pre-heat a large skillet over medium-high heat.

Chicken Enchilada Burrito instructions

  1. preheat oven to 350.
  2. Mix chicken, sour cream, 1 can enchilada sauce, & green chillis in a bowl..
  3. Fill shells with chicken mixture, roll, place side by side in greased dish, and pour second can of enchilada sauce on top..
  4. Bake for 30 min. Add cheese to top, return to oven until melted. Serve..

Add the olive oil and sear the chicken thighs on both sides. Transfer the chicken thighs to one or two zipper lock plastic bags and set aside. Add the diced onion, pepper, and reserved spice mixture to the pan. This a good chicken BURRITO recipe. The problem with almost every recipe on this site for chicken enchiladas is that they call for flour tortillas!!
